No Substitutes! Greek-Yogurt Curry Chicken Salad

Remember olestra (or Olean), the fat substitute that did a number on your digestive system? What about Snackwell’s®, the cookie substitute that proved to be dieters’ kryptonite? There was a time when substitution was all about taking things out of our diets—sugar, fat, calories, carbs. Nowadays, a lot of people substitute food and ingredients to put more things into their diet—protein, nutrients, vitamins, minerals. Some call this trend “functional eating”—bleh! If that’s your thing, I think there’s another website for that.

I believe eating should always be about enjoyment, and therefore cooking (or any preparation of food) should always be about amplification of tastes, textures, colors, aromas, and the good things that make food enticing and delightful. The good news is that there are a lot of so-called “functional” (a.k.a. “super”) foods and ingredients that are the original tastiest, sweetest, creamiest, nuttiest—or in the case of my next recipe—tangiest. High protein, low sugar, 0%-fat greek yogurt is the one-and-only, never-a-substitute foundation for my Greek-Yogurt Curry Chicken Salad. Its tangy flavor is the ideal complement to the Major Grey’s chutney and sweet honey that are as vital to this recipe as the curry and the chicken. And, its thick texture holds up to a squeeze of fresh, bright lemon juice resulting in the most divine whole-grain bread topper (or lettuce topper, pita topper, chip topper, cracker topper…you get the idea, it’s delicious on just about anything!). So, say “No!” to substitutes, and just enjoy the good stuff…because sometimes the good stuff is good for you too!
